The milk proteins (caseins) are extracted from the skimmed milk by microfiltration. The retention fluid (concentrated milk protein) can be used either in liquid form, with a solid content of approx. 16%, in the production of fresh produce or for
protein standardization in cheese milk. When concentrated and then dried, the powdered milk protein provides numerous functional properties, on account of its nature (free of enzymatic or microbial rennet). The total protein content of this product is approx. 58%, 50% of which is made up of casein.
